About The Brick Oven Bakery

History of the Bakery

Opening of The Brick Oven Bakery

Steve, Tony and Rocco

In the fall of 1980, unemployment rates and a recession found Steve and Tony, fresh graduates of the University of Toronto, ready to enter the workforce. As teaching positions and good-paying jobs were hard to come by and companies were constantly laying off employees, they were both wondering what was next. When Tony’s brother-in-law, Rocco, asked Tony to take over his delivery run for Milano Biscuits while he was on his honeymoon, it seemed like the perfect opportunity for Tony to gain some experience and some extra cash. It was this chance experience that inspired Tony and set the wheels in motion for the future of The Brick Oven Bakery.

Seeing the bakeries as he made his deliveries sparked a new interest in Tony and he wondered what it would be like to own one of his own. He shared his idea with his friend Steve, who eventually would share the same dream. Then, when he took a wrong turn on a delivery route on Guelph Line one day, Tony came across a vacant area marked “proposed plaza,” which looked like the ideal place to set up shop. After inquiring about the site, he and Steve managed to convince the landlord to take a chance on them. Steve and Tony soon completed a baking course at George Brown College and internship at Molisana Bakery in Woodbridge, ON, where they worked full-time for over a year while The Brick Oven Bakery was being built.

The Brick Oven Bakery opened its doors in August 1982, with a hard-working staff that wholeheartedly acted on their motto: “You’re only as good as your last batch.” It’s this penchant for perfection that ultimately makes the bakery so successful today.

As owners, Steve, Tony and Rocco oversee the entire operation with close eyes to ensure their customers are always provided with the highest quality items.
